A: Ginger Lemonade
3 cups granulated sugar
4 quarts water
14 slices fresh ginger root
4 cups fresh lemon juice
2 lemons, sliced
In an 8-quart saucepan combine sugar, water and ginger root. Heat to boiling, stirring occasionally. Remove from heat. Stir in lemon juice. Cool 15 minutes. Remove ginger. Refrigerate lemonade at least one hour, or until chilled. Serve over ice and garnish with lemon slices.
Pineapple Colada Smoothie
1/3 cup crushed pineapple, slightly drained
1 cup nonfat vanilla frozen yogurt
1/2 teaspoon coconut extract
Combine all ingredients in blender. Process until smooth. Serve immediately.
Makes 1 serving.
Chocolate Malt
1/2 cup Whoppers
1/2 cup milk
2 scoops ice cream
Combine and mix in blender all the ingredients in a blender.
Makes 1 serving.

Direction :
In a mixing glass, muddle lime and mint with gomme. Add the remaining ingredients except beer and fill with ice. Shake sharply and pour it into a highball glass filled with crushed ice. Top with beer. Garnish some mint leaves on top.

A: To make good Almond Milk (Don’t know how this one will turn out but good luck)
This Renaissance almond milk recipe makes a delicious, warm beverage that was enjoyed by both the young and old alike.
Take Jordan Almonds blanched and beaten with Rose water, then strain them often with fair water, wherein hath been boiled Violet Leaves and sliced Dates; when your Almonds are strained, take the Dates and put to it some Mace, Sugar, and a little Salt, warm it a little, and so drink it.
Hot Mulled Cider (this calls for brandy but I am sure it will be good without it)

# 2 quarts red grape juice
# 2 cups orange juice
# 3 lemons, sliced
# 3 oranges, sliced

A: Luscious Slush Punch
“This is without a doubt the best punch I’ve ever had! Makes enough for 2 punch bowls. This is our Christmas Eve punch tradition, and there is never a drop left!”
INGREDIENTS
2 1/2 cups white sugar
6 cups water
2 (3 ounce) packages strawberry flavored gelatin mix
1 (46 fluid ounce) can pineapple juice
2/3 cup lemon juice
1 quart orange juice
2 (2 liter) bottles lemon-lime flavored carbonated beverage
DIRECTIONS
In a large saucepan, combine sugar, water, and strawberry flavored gelatin. Boil for 3 minutes. Stir in pineapple juice, lemon juice, and orange juice. Divide mixture in half, and freeze in 2 separate containers.
When ready to serve, place the frozen contents of one container in a punch bowl, and stir in 1 bottle of lemon-lime soda until slushy.
Apple Orchard Punch
“This quick and easy punch would be delightful at a country wedding or any celebration. Champagne can be used instead of ginger ale for an adult punch.”
INGREDIENTS
1 (32 fluid ounce) bottle apple juice, chilled
1 (12 fluid ounce) can frozen cranberry juice concentrate
1 cup orange juice
1 1/2 liters ginger ale
1 apple
DIRECTIONS
In a large punch bowl, combine apple juice, cranberry juice concentrate and orange juice. Stir until dissolved, then slowly pour in the ginger ale.
Thinly slice the apple vertically, forming whole apple slices. Float apple slices on top of punch.
Amazingly Good Eggnog
4 cups milk
5 whole cloves
1/2 tsp vanilla extract
1 tsp ground cinnamon
12 egg yolks
1 1/2 cups sugar
2 1/2 cups light rum (Substitute some rum flavoring/extract)
4 cups light cream
2 tsp vanilla extract
1/2 tsp ground nutmeg
1 Combine milk, cloves, 1/2 teaspoon vanilla, and cinnamon in a saucepan, and heat over lowest setting for 5 minutes. Slowly bring milk mixture to a boil.
2 In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil. Strain to remove cloves, and let cool for about an hour.
3 Stir in rum, cream, 2 teaspoon vanilla, and nutmeg. Refrigerate overnight before serving.

Combine well together and mix with equal parts of club soda to make one tall drink.

Combine all ingredients except rum in a medium saucepan and bring to a simmer, stirring occasionally.
Simmer 5 minutes.
Stir in rum just before serving, if desired.
Fruit and Honey Punch – 8 to 10 servings
2 cups each apple cider and cranberry juice
1/4 cup honey
1 cinnamon stick
4 each cinnamon stick lemon slices and whole cloves
Combine all ingredients in saucepan; heat only until mixture boils.
Pour into serving glasses or mugs; serve immediately.
Tip: One to two cups of dry red vine may be added.
Hot Spiced Tea – 4 servings
4 cups freshly brewed tea
1/4 cup honey
4 cinnamon sticks, each 3 inches
4 whole cloves
4 slices citrus fruit
Combine tea, honey, cinnamon and cloves in medium saucepan.
Bring to a simmer over medium heat and continue heating without boiling for 5 minutes.
Strain into mugs
Serve hot
Garnish with citrus fruit
Spiced Honey Coffee – 8 servings
1/4 cup honey
4 whole cloves
4 sticks cinnamon
1 slice (½ x 2 inches) lemon peel
1/4 cup brandy
Strong hot coffee
Combine honey, cloves, cinnamon sticks and lemon peel in small sauce pan
Cook and stir over medium heat. until mixture boils 1 minute.
Stir in brandy.
Spoon 1 tbsp mixture into each demitasse cup
Stir in coffee
Mexican Coffee – 4 servings
4 cups hot espresso-style coffee*
3/4 cup half-and-half cream
1/3 to ½ cup honey (to taste)
2 tbsp unsweetened cocoa
1 tsp ground cinnamon
sweetened whipped cream (optional)
chocolate shavings (optional)
Combine coffee, half-and-half, honey, cocoa and cinnamon in blender
Blend 1 minute on high.
Pour into mugs; garnish with whipped cream and chocolate shavings.
*Hot strong coffee may be substituted.

Chicken Cordon Bleu Burgers
27 min 15 min prep
2 teaspoons vegetable oil or olive oil, plus more for drizzling
4 slices Canadian bacon
2 lbs ground chicken
2 teaspoons sweet paprika
2 teaspoons poultry seasoning
2 teaspoons garlic steak seasoning (Montreal Steak Seasoning) or salt and pepper
1 shallot, finely chopped
4 slices swiss cheese
2/3 cup mayonnaise
3 tablespoons Dijon mustard
2 tablespoons fresh tarragon, 4 sprigs chopped
4 kaiser rolls or English muffins, sour dough, split and toasted
8 leaves leaves lettuce
1 tomato, vine ripe, thinly sliced
Preheat grill pan, nonstick griddle, large nonstick skillet or table top electric grill to medium high heat.
Add 2 tablespoons of oil and Canadian bacon. Warm bacon and caramelize it at edges, 1 to 2 minutes on each side. Remove to a piece of foil. Fold foil over loosely to keep warm.
Pour olive oil on plate. Finely chop shallot (not too much shallot or too big, or the burgers will fall apart).
Combine chicken, paprika, poultry seasoning, grill seasoning, shallot.
Score meat with the side of your hand to separate into 4 equal amounts. Make 4 large patties, 3/4 to 1 inch thick. Drop each patty onto the plate you poured olive oil on and coat with oil and place on hot grill pan, griddle or in skillet. Cook 5 minutes on each side, until chicken is cooked through.
Top patties with reserved cooked Canadian bacon and Swiss cheese. Fold each slice of cheese in half to fit the burger. Cover loosely with tin foil. Turn off pan and let cheese melt, 2 minutes.
Combine mayonnaise (or reduced fat mayonnaise, eyeball it), mustard, tarragon. Slather bun tops or English tops with sauce. Place Cordon Bleu burgers on bun bottoms and top with lettuce and tomato. Put bun or muffin tops in place. Serve with fries.
Italian Sausage Stromboli
1 lb frozen pizza dough, defrosted
1/2-3/4 lb Italian sausage
1 green pepper, 1/4 inch wide slices
1 medium onion, 1/4 inch wide slices
italian seasoning
1-1 1/2 cup mozzarella cheese
2-3 tablespoons grated parmesan cheese
pizza sauce (optional)
Lay pizza dough on a lightly floured surface so it can rest.
Slice Italian sausage into 1/2 inch slices; fry in a 10″ skillet over medium heat until browned, about 10 minutes.
Add 1/2 cup water, peppers and onions; bring to boil and cover.
Reduce heat to low and cook about 5-10 minutes more, or until veggies are tender and sausage is heated through.
Drain liquid from skillet and sprinkle sausage mixture with Italian seasoning; set aside.
***If you have leftover sausage, onions and peppers, like I did, you just need to warm it up***.
Preheat oven to 375 degrees and spray a baking sheet with cooking spray.
Roll pizza dough (on a lightly floured counter) into a rectangle, approximately 11 x 17.
Sprinkle with sausage mixture, then the cheeses.
Start at the bottom of the long side and roll jellyroll fashion, stopping occasionally to stuff sides it. When you get to the end, pinch seam together, trying to squeeze air out as you go.
Place seam side down on baking sheet; bake for about 25 minutes at 375 degrees.
Remove from oven and lay a clean dish towel on top of loaf; this will allow the crust to soften up and it will be easier to slice and eat.
After about 10 minutes or so, slice into 1 inch slices. Serve with warmed sauce for dipping, if desired.
Hamburger Casserole
1 1/2 lbs fresh ground chuck
1 large onion (chopped)
1 (8 ounce) package noodles
1 (16 ounce) can whole tomatoes or diced tomatoes
1 can white corn
1 (10 ounce) can condensed tomato soup
1 cup grated cheddar cheese
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic salt
Brown onions and meat,season with salt pepper and garlic salt.
Boil the noodles in water for 6 minutes and drain.
Drain corn.
Mix all ingredients and turn into a two-quart greased casserole dish.
Can top with a little more grated cheese.
Bake 30 minutes at 350 degrees
Beer Battered Fish (For Fish N’chips)
2 lbs frozen cod, thawed (fresher tasting)
1 cup all-purpose flour, plus
1/2 cup all-purpose flour, to dredge
1 1/2 teaspoons salt
1 1/2 teaspoons paprika
2 (12 ounce) cans cold fresh beer
oil (for frying)
sift together flour, salt, and paprika.
Stir in enough beer to make batter so it is barely thick enough to coat a spoon. Usually somewhere between one and two cans.
(It may look too thin, but you want it that way, if it’s too thick, the batter will be chewey instead of light and crunchy) Set batter aside while you heat your deep-fryer or deep pan of oil to 375 degrees.
use a candy thermometer if you need to.
Peanut oil is best but any vegetable oil will do.
Cut the cod fillets diagnally into 2 inch wide strips, and remove any pin bones from fish.
Lightly coat fish in flour and shake off excess.
this will allow batter to stick to fish.
When oil is heated, dip fish in batter, let excess drip off, then fry fillets 2 or 3 at a time until golden brown.
Drain on paper towels.
Serve with fries and tartar sauce.

Pina Coladas…. serves 6
1 1/3 cups oz light rum
1 1/3 cups creme of coconut
1 1/3 cups crushed pineapple
You can buy all of this at a liquor store except the pineapple
Put all ingredients into an electric blender with 2 cups of crushed ice. Blend at a high speed for a short length of time. Garnish with a pineapple chunk.Strain into a collins glass and serve with a straw.
