***Souffled Pumpkin Pancake***

5 tablespoons butter
1 tablespoon brown sugar
1/4 cup pecan halves
2/3 cup all-purpose flour
1 teaspoon pumpkin pie spice
1/3 cup sugar
1/4 teaspoon salt
4 eggs, separated
2/3 cup buttermilk
1 1/4 teaspoons vanilla extract
1 cup pumpkin puree
Confectioners’ sugar, for dusting
Maple syrup, for serving

Preheat oven to 350 degrees F.
Melt 2 tablespoons butter in a 10-inch skillet over medium-low heat. Add the brown sugar and stir until the sugar begins to melt. Add the pecans and cook for 2 more minutes. Transfer the pecan mixture to a small dish and set aside. Reserve the skillet for the pancake.

In a small bowl mix together the flour, pumpkin pie spice, sugar and salt. Set aside.

Melt the remaining 3 tablespoons of butter. In a large bowl, add egg yolks, buttermilk, vanilla and melted butter and whisk until blended. Gradually whisk in flour mixture. Stir in the pumpkin puree.

Beat the egg whites until soft peaks form and gently fold into the pumpkin mixture. Gently spoon the batter into the reserved skillet. Sprinkle the top of the pancake mixture with the reserved pecan mixture. Bake for 20 to 30 minutes or until golden brown.

Dust the pancake with confectioners’ sugar. Cut into wedges and serve with maple syrup.

***Brown Sugar Bacon***
1/2 cup brown sugar
1 tablespoon Dijon mustard
1/4 pound sliced bacon

Preheat oven to 400 degrees F.
In a large plastic zip-top bag, combine brown sugar and mustard. Add bacon and toss to coat.

Line a baking sheet with aluminum foil or parchment paper. Place a cooling rack on the lined baking sheet. Put bacon on rack and roast in oven for 20 minutes. Let drain for a few minutes on the rack and serve.

Q: What are some healthy breakfast recipes that are sort of easy to make?
I’ve lost almost 45 lbs. But I am having trouble losing anymore. Currently at 159 lbs. I love eating sort of sugary cereals for breakfast like fruit loops and pops. Since I cannot lose anymore weight, I am going to cut out sugar cereals to see if that will help.

So, what are some healthy recipes that are high in protein preferably, but are somewhat easy to make? I have lots of eggs, my mother has chickens so eggs are always in high quantity here. But I hate just making egg white omelets all the time.

Mix egg white with lean chopped ham and cook in a skillet.
Oatmeal with raisins.
A small bagel with 2 teaspoons of peanut butter.
Low fat cottage cheese or yogurt is high in protein.

Q: Why are there so many sweet breakfast recipes and not that many savoury ones?
I am fed up of trying to find savoury breakfast recipes that do not involve frying, lots of grease, and time. I am diabetic and need carbs, such as bread, but no sugar. I am bored with porrige and sandwiches. So come on, help a lass out, who is struggling! Thanx in advance.

A: There are loads of savory things for breakfast. Dozens of different omlets and frittatas.

Or, how about breakfast burritos? My family loves those. Crumble some sausage and brown it. Beat some eggs and pour then into the pan with the sausage and scramble them, seasoning with salt and pepper. Add shredded cheese, sauteed onions, sweet peppers, mushrooms or whatever you like. Warm some flour tortillas and put a scoop of the egg mixture in each tortilla and roll them up. Add a dollop of salsa before rolling them, if you like.

You’ll need about an ounce of sausage and one egg for each tortilla you want to make.

I am looking for a variety of easy breakfast type recipes that can be made the night before and heated in the morning. I lead a morning bible study at my church and to encourage attendance I feed the dedicated souls that attend each week. I hate to serve the same thing every Sunday and am looking for ideas. A: Easy Breakfast Quiche

1 can of cressent rolls
1 green pepper chopped
1 red pepper chopped
1 small onion chopped
1 package of smokee links chopped
6 eggs
1/2-3/4 cup of milk
1 bag of cheddar cheese shredded

Press the rolls into a baking dish and spread the chopped peppers and onion, links, and shredded cheese on top. Let sit in fridge overnight covered.

In the morning beat eggs and milk and pour into baking dish. Add salt and pepper and bake @ 350 for 45-60 min. The quiche is done when its not wiggley in the middle.

Super yummy and easy breakfast,

Serve with fresh fruit and juice.

Sorry – I mean “thinly” cooked – like so it can be rolled.

A: Sounds like you’re on the right track!

Scrambled eggs, diced onions and peppers, sliced mushrooms (if your guests like them), and some meat!

All are pretty good: sausage, bacon, Canadian bacon, etc. Cook it up and combine it with the egg mixture.

And don’t forget the cheese! Plenty of cheese mixed in with all of this.

Eggs, veggies, meat, and cheese are all low carb . . . the carbs will come from the tortilla or crepe.

Serve with sour cream and salsa, they will go fast!

A: Great for the morning after sleepovers too, you can cut the recipe down if you want:

Double Banana Pancakes

Ingredients:
1 Cup All-Purpose Flour
1 3/4 tsp Baking Powder
3/4 tsp Salt
1 T Sugar
2 Large Ripe Bananas
3/4 Cup Soy Milk
2 Large Eggs
2 tsp Vegetable Oil

FOR TOPPING:
1 T Unsalted Butter
2 Large Ripe Bananas — Sliced
Nutmeg — Freshly Grated
3/4 Cup Maple Syrup — Warmed
TO PREPARE PANCAKES:

In a large mixing bowl, sift together flour, baking powder, salt and sugar. Mix to blend. Set aside.

Puree bananas in a food processor, fitted with a metal blade to a smoth, liquid consistency. Transfer puree to a mixing bowl. Add milk, eggs and oil. whisk to blend well. Add dry ingredients – whisking to incorporate.

Preheat oven to 250 degrees fahrenheit. Heat a gridle. Add butter to bottom of pan. When butter is hot, ladel 2 T of batter onto griddle, cooking until the tops of the pancake bubble and the underside is brown. (2-3 minutes) Turn and cook other side until godlen brown – about 2 minutes more.

Transfer to a baking sheet. Continue until all the batter has been used.

TO PREPARE TOPPING:

Heat butter in a large skillet. When hot, add sliced bananas – saute, stirring constantly until bananas are warm, about 1 minute.

To serve – arrange 4 pancakes on each of 4 dinner plates – top with sauted bananas – grated nutmeg and warm maple syrup.

Q: Healthy breakfast recipes with freshly picked strawberries?
I just went strawberry picking today and I was wanting to make something really tasty for breakfast. And I would prefer to have it be something healthy. What are some of you favorite recipes with strawberries for breakfast?

A: This is actually mindbogglingly UNhealthy, and can serve as both breakfast and dessert, but I made this for my cooking show the other day:

Cut up some strawberries (as many as you like, but for one serving 100g or so should be enough) and mash about a third of them with some sugar, mixing with the whole slices. Then take a large crêpe (20cm or so), heat it quickly in the microwave or on a lightly greased pan, and cover half of it with a layer of mascarpone cheese. Place the strawberries on top of the mascarpone, fold or roll, and serve with some powdered sugar.

A: the only breakfast i usually make is weetabix and vanilla milk.
but since you asked for a receipe, i sometimes make myself an asian-style omlette.
one egg, beaten and add some thinly sliced green chillies into it (i remove some of the seeds or it gets too hot), pepper, salt, chillie flakes (if you like more heat), splash of soya sauce and drop or two of nam pla/fish sauce.
beat everything together, and make a really thin omlette. almost paper thin, kinda like a crepe or pancake. don’t fold.

A: Although I’m sure there are many books about breakfast menus, I only have one–that is, “Breakfast with Friends” Seasonal Menus to Celebrate the Morning. It is written by Elizabeth Alston, who also authored “Muffins” and “Biscuits and Scones”. “Breakfast…” was published by McGraw-Hill Publishing Company in 1989. ISBN 0-047-001402-7.
I don’t know if the recipes will work with a diabetic diet, but with so many substitutes for sugar and the like out there these days, you might want to give it a look.
I also have another book, which is not a cookbook, but a valuable source of information regarding various foods, nutrients, dozens of common diseases (including diabetes) and/or conditions, etc. It’s called, “Foods that Harm Foods that Heal” an A-Z Guide to Safe and Healthy Eating. It is actually a Reader’s Digest book, and quite informative. It was published by Reader’s Digest in 1997, ISBN 0-89577-912-9.
Of course, you can always look to some of the older cookbooks (which my mom passed on to me) like Fanny Farmer, Pillsbury, Betty Crocker and the like, as they have lots of different–albeit sometimes a little funky–breakfast (among others) recipes.
One of my favorite chefs is Jacques Pepin, who is a fabulous chef, and besides having made cooking an art, has also simplified it and made it accessible to those of us without culinary educations. You can Google him or go to Jacquespepin.net, which will give you recipes for just about anything.
I would also try looking through the cookbooks of some of the other more popular chefs who have been published. As cooking becomes more popular, so do chefs and cookbooks. Some are fancy, but most seem to be written for the average person–as are the recipes. Wolfgang Puck comes to mind. He has several books on the market; and I know of at least one that has a chapter on breakfast menus–”Adventures in the Kitchen” by Wolfgang Puck, published by Random House in New York in 1991, ISBN 0-394-55895-2.
And then there’s always Martha Stewart, the queen of “special” meals and occasions, etc. Go to: www.marthastewart.com/.
I really recommend using the internet–there’s soooo much out there. So many cooking sites. To name a couple:

A: Pancetta Frittata
Ingredients
8 ounces pancetta, diced
6 ounces shallots, peeled and thinly sliced
12 eggs
1/4 teaspoon kosher salt
fresh ground black pepper
4 ounces gruyere cheese, grated
2 tablespoons minced fresh flat-leaf parsley
1 tablespoon olive oil, plus more for drizzling
8 ounces mixed salad greens
1 tablespoon fresh lemon juice
Directions
1In fry pan over medium-high heat, cook pancetta until crisp, 5-7 minutes. Transfer to paper towel-lined plate.
2Pour off all but 1 tbsp fat from pan; return pan to medium heat. Cook shallots until tender, 5-7 minutes. Remove from heat.
3In large bowl, whisk eggs, salt, pepper, cheese, and parsley. Stir in pancetta and shallots. In deep half of frittata pan over medium-low heat, warm 1 tablespoons of oil. Add eggs; cook until they begin to set, 8-10 minutes. Stir occasionally with rubber spatula during first 2 minutes of cooking. Place shallow pan upside down on top of deep pan; flip frittata into shallow pan. Cook, covered, unti eggs are completely set, 7-10 minutes. Shake pan to loosen frittata; slide it onto serving plate.
4Let stand 10 minutes. In bowl, toss salad greens with lemon juice and drizzle of olive oil. Cut frittata in slices.
